Last Sunday night for Family Focus Deborah Williams made a special ice cream for which many members in attendance requested the recipe. She is sharing that recipe with everyone. Enjoy!!
Sweet Potato Ice Cream
2 c. Sweet Potatoes, baked & mashed with 3/4 c. Brown Sugar & 2 tsp. Cinnamon, then chilled thoroughly
2 cans Sweetened Condensed Milk
1 c. Sugar
1 qt. Half & Half
Whole Milk
In a large bowl, mix all ingredients (except whole milk) thoroughly. Pour in canister of ice cream churn & place dasher inside. Fill to line with whole milk & twist dasher several times to mix. Place lid on canister & churn according to your ice cream mixer’s directions. Serve with Candied Pecans & Caramel Syrup. Waffle Cones are good, as well!! Enjoy!
Candied Pecans
16 oz. Pecan halves
1 Egg White
1 Tbs. Water
1 c. Sugar
1-2 tsp Cinnamon
Whisk egg white & water til frothy. Stir in pecan halves until all are wet. In another bowl, mix sugar & cinnamon thoroughly. Sprinkle sugar mixture over pecans a little at a time, stirring between additions. Pour onto foil or parchment lined baking sheet & bake at 250 degrees for 1 hour. Stir every 15 minutes. Cool & store in airtight container.
